1 (8 ounce) can unsweetened crushed pineapple, undrained
2 tablespoons cider vinegar
2 tablespoons reduced-sodium soy sauce
1 garlic clove, minced
1/8 teaspoon pepper
6 boneless skinless chicken breast halves (1-1/2 pounds)

DIRECTIONS
In a large resealable plastic bag, combine the first five ingredients. Add chicken. Seal bag and turn to coat; refrigerate for 30 minutes. Place the chicken and marinade in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray. Cover and bake at 350 degrees F for 25 minutes or until chicken juices run clear.

Nutritional Analysis: One serving (1 chicken breast half with 2 tablespoons sauce) equals 149 calories, 1 g fat (trace saturated fat), 66 mg cholesterol, 276 mg sodium, 5 g carbohydrate, 1 g fiber, 27 g protein. Diabetic Exchanges: 2 lean meat, 1 fruit.

This was simple to make and tasted okay, however, the cider vinegar overpowered the other flavors. Next time I won't use the vinegar. The chicken wasn't cooked in the time suggested, so I removed the foil and cooked an additional 10 min. The chicken was very moist, though!

I made a few minor adjustments and my kids and I liked it really well. I lined the pan with aluminum foil for fast cleanup. This is very easy to prepare and we just had rice and green beans on the side. Thanks

This recipe was superb! I made a double batch for a party and both trays went! One slight variation....almost at the end of the baking time, I put the pan of chicken in the broiler for a few minutes to give it a more golden color. It's a great recipe for those watching their diets as well.

I USED THIS RECIPE FOR A LUNCH AND FASHION SHOW APPROX. 110 PEOPLE. IT GOT RAVE REVIEWS FROM EVERYONE. WE ARE HAVING A FRIDAY NITE DINNER AND THIS RECIPE WAS REQUESTED. JUST BE CAREFUL USING A NON-REACTIVE PAN TO COOK IT IN, WE LINED OUR BAKING PANS WITH PARCHMENT PAPER AND IT WORKED LIKE A CHARM
