Sweet Potato, Pear and Pineapple Bread Pudding

This bread pudding can be served as a decadent side dish or dessert. Creamy sweet potatoes, silky pears and tart pineapple with a pecan streusel topping. If serving for dessert, add chilled whipped cream. This casserole is quick and easy to make and also travels very well.

She's a tremendous cook and the goodies from 'Edith's Kitchen' are always welcomed and eagerly devoured - this bread pudding is one of the best!

I love all things strawberry so when I was asked to make bread pudding I decided to try adding strawberries. The results were heavenly. I have never liked bread pudding... until now that is. I will definitely be adding this to my list of favorites.
