My market hadn't unpacked their green beans yet so I was forced to substitute with haricots verts, which turned out to be a lovely surprise. Beautiful and elegant presentation with just the stem ends trimmed. I decided to continue on the elegant theme and also substituted shallots for the onion. Once cooked to crisp/tender, I topped the haricots verts with the chopped pimiento, flaked finishing sea salt, freshly ground pepper and fresh shaved Parmigiano Reggiano cheese. Beautiful, but a little short on flavor. I thought it was unusual this didn't call for any olive oil or butter, but decided to try them as written thinking I might just like it without. Nope - these definitely needed the olive oil or butter, as well as some fresh minced garlic or other seasoning. All and all, these were still good enough to be repeated as adding seasoning is an easy enough fix.
