I grew eating fresh Pierogis but I've never once tried to make them. I happened upon this recipe and was determined to make it.
I modified the recipe a bit. I added a few more potatoes, a little more onion and 1 TBS of greek seasoning.
I put the bacon, butter and onion directly into the mashed potatoes instead of topping it.
My family, which includes a 5 and 6 year old, loved it. It's a very heavy dish and one that we don't make very frequently. When I do make it I serve with something light - steamed veggies or a salad.
