My family of 6 (4 kids under 7) all loved it. To make it a little faster, I bought a bag of frozen chicken fajita strips, started with step 3 and went from there. There was more than enough food to fill everyone up!!! I would rec using 1 lime instead of 2 as the juice was just a little overpowering. Thanks for a great recipe!

WOW!! This was really, really good! I'm rating it 5 stars because I had every thing in my pantry and it was a last minute meal. HUGE flavor on these quesadillas. This made 3 big quesadillas 1 more than the recipe stated. The pico de gallo is awesome. I followed the recipe exactly except I used red instead of green pepper- just a personal preference. I should have doubled the pico de gallo. WOW, WOW, WOW so good and filling and economical to boot. Thanks for sharing I will be making these again and again.

This was really really good. It was packed with flavor. I took some of the other reviewers suggestions and I used pepper jack cheese and seasoned my chicken with cayenne, salt, pepper and garlic powder.

This recipe is fantastic!! Best quesadillas we've ever had. Easy to make, tasty. I made them Saturday for the first time for a group of 4 and everyone loved them. All I did different was to add chopped garlic to the pico and used both monterrey jack and cheddar cheese. These were great reheated the next night as well. Served with sour cream, homemade guacamole, mexican rice from this site and banana margaritas later in the evening...a perfect Mexican Fiesta! Also served the pico with chips and that is great too. Thank you for sharing.

I made these for the first time tonight, not only were they easy...they were AWESOME! The Pico was SO yummy and fresh. I used extra cilantro becasue I LOVE it. Next time I think I will add a little more lime juice as well. I also had leftover chicken breast from last night's dinner so that made this much quicker and easier to put together. I am glad my husband was here to do the flipping duty because I probably would not have been able to myself. I think using half the tortilla and folding it over may be the better option. Definetly make extra pico for dipping chips in! YUMMY :)

This pico was delicious, but the overall quesadilla came out lacking. I think they need more cheese, both for taste and to hold the quesadilla together. My kids had a really hard time eating these b/c they fell apart.
