These were delightful. IMO simple flavors are always the best and this recipe was no exception. The pico de gallo was flavorful and was the perfect accoutrement to the quesadillas. This will definitely be my go to recipe for Pico de Gallo!

This is the best quesadilla I've ever had. I didn't have limes so I used lemons instead and it turned out great. The tortillas didn't fit in my skillet so I used a cookie sheet over the stove to brown the quesadillas. The pico de gallo kept it authentic and fresh.

Excellent! I used leftover chicken quarters that were smoked on the grill. The pico really makes this recipe. Very filling!!!

WOW this pico de gallo is awesome...combined with everything else it was a stellar quesadilla. My only regret is not doubling the recipe...next time I will! Thanks =)

Mmmm, mmm, mmm! These were so tasty! I followed the recipe except for getting lazy at the last minute and using canned chicken, but it was really great! I used the flour tortillas for my kids and I used corn tortillas for my own because of fewer calories and higher fiber. We all loved them! I also cut back on calories by heating my griddle to 375 and using Pam cooking spray on the griddle and then spraying the tortilla tops again before flipping them over to cook on the other side. Definitely going to be a favorite recipe now!

I agree that a good prepared salsa would be just about as good and less work. Another way I make it easier is to use rotisserie chicken, which also adds some nice flavor.

I thought this was very good but it just seemed to be missing something for me. I don't know if the chicken needed some seasoning or what it was. Also, the pico de gallo is good, but I think it would have tasted just as good and been faster to just use your favorite salsa instead. We love Jack's Special Salsa so I think I'll just try this concept but with that salsa next time.

Very tasty. Spicy enough without the jalepeno peppers, as we forgot to buy them at the store. Will add to the recipe next time as we will make this again.

Very tasty and a quick & filling lunch. I used leftover grilled chicken (Key West Chicken) and didn't add any of the tomato pico to the quesadilla as I was using ripe-from-the-garden tomatoes and was afraid they would be too juicy and make the tortilla soggy as other reviewers noted.

I used this recipe for Pico De Gallo only...I did not make the quesadillas. But the Pico was amazing!!! I will have to try to make these quesadillas another day...but the Pico goes great with Fiesta Lime Chicken! Yummy!!

Loved it, but the pico de gallo made my dillas a little on the soggy side. We ate them with a fork. My fault I suppose...try not to put any liquid in your dillas!

Yum! This is a really delicious recipe! I've made it many times and my family can't get enough of it! *****Here are a few changes I've made: 1) add 2 cloves of minced garlic to the pico de gallo for some extra oomph; 2) make the pico de gallo ahead of time so the flavors can develop (I normally quadruple the amount); 3) use the pico de gallo liquid to marinate the uncooked chicken strips; 4) after the onions and bell peppers are tender, I stir fry the chicken until it's cooked, turn off the heat and then add in the pico de gallo 5) drain the mix or you'll end up with drippy quesodillas; 6) use pepper jack cheese for a really nice kick.

Absolutely Superb! I followed the recipe EXACTLY & it turned out wonderful! It was very easy to make & the flavors blended perfectly. It is even better than the one my favorite restaurant makes! Wonderful. Very fresh flavor. One change - only for ease of preparation - is to use one tortilla and fill half with the toppings and then fold over as opposed to using 2 tortillas and having to deal with flipping. We omitted the sauted green peppers and onions and also added some leftover grilled corn and about a teaspoon of sugar to the pico. Yum.
