This was my first pickling venture & this was an easy to follow recipe. What I pickled was Elephant Garlic spears. They taste somewhat like asparagus with a garlic flavor. Our local market is selling these. They look like very thin asparagus with an unopened flower bulb. I love these and the season is short so I thought I would pickle them. It worked out really well. I used a pickling spice sold at the store. This was a lot of fun and went really fast. I read some of the reviews and took the advice to pack them as tight as I could. I was afraid that the 20 minute processing time would make them mushy, but not at all.

This pickled asparagus is delicious! Very easy to make, too. A pretty and unusual addition to an antipasto or salad. Friends rave about this.

These turned out great. Good flavor, look good in the jar, and not at all difficult to make.
