2 teaspoons canola oil
1 pound skinless, boneless chicken breast halves
2 cloves garlic, minced
1 (16 ounce) package frozen stir-fry vegetables
1 (16 ounce) jar Pace® Picante Sauce
1 tablespoon reduced-sodium soy sauce
1/2 cup dry roasted lightly salted peanuts, chopped
Made this and it turned out wonderfully. I added some things like roasted red peppers and served it up with rice.
I added in some in home spices and seasonings onto the chicken while it was cooking. Very flavorful.

Simple to make and very flavorful. Serve over rice and its a complete meal.
Big hit with everyone in the family. It's not too spicy and I used stir fry with noodles and it turned out great!
Really good meal. I added a tiny bit of sesame oil and more soy sauce and we had it over rice. I didn't bother chopping the peanuts and we thought it worked fine.
