  1. Preheat oven to 350 degrees F.
  2. Blend together cake mix, 1/2 can of the LUCKY LEAF Premium Peach Pie Filling and eggs in large mixing bowl. Beat with an electric mixer at medium speed for 2 minutes. Stir in remaining pie filling until well mixed.
  3. In a small bowl, combine sugar and cinnamon. Spread half the batter in greased 13x9-inch baking pan; sprinkle with half the cinnamon sugar mixture. Repeat with the remaining batter and cinnamon sugar mixture.
  4. Bake for 30 to 35 minutes, until wooden pick inserted in center of cake comes out clean.

This cake is very easy and fast. It's also delicious! Very light texture, excellent for spring and summer. It reminds me of a coffee cake but much lighter and softer. I used egg beaters instead of regular eggs and more of the sugar and cinnamon mixture. Seems like it would also be great with an apple pie filling. I'll definitely be making this again!
