This was an incredible bird!! I did exactly as the recipe called for and it was delicious. I've always bbq'd/smoked or fried our Thanksgiving turkeys but decided to roast this year due to Colorado weather not cooperating. Brining the bird in 2 cups kosher salt and using a non-reactive stock pot worked the best. Thanks for a great recipe that will definitely be used for years to come!

I was, as always, in charge of the turkey this year for Thanksgiving. Well, this year I decided to try something new. I used this recipe(with some of my own tweaks) and it was a hit! I used chicken broth instead of the wine and I also used more thyme than what was called for. Everyone loved the turkey! This turkey was the most tender, most jucy bird I have ever made! I told my brother about the turkey and now he has me making him one especially for him when he comes to visit later this month! Thanks so much for this amazing recipe!

This really was the perfect turkey. I didn't place it breast side down and then turn it because I knew that would be hard to do with a 20 lb. hot turkey. I didn't use the vegetables, either, since I didn't need them. So basically, I used the brine and cooking directions - it turned out perfect. Very moist and very tasty. Will use this again and again!

Great Smell but, the brine was off in my opinion. Resulting in a very dry Turkey. I bought two turkeys same weight and brand. My husband and I made this one and the Elton Brown one. The Elton B. one was terrific, So moist. The brine included herbs with the salt and broth to cover the bird while it brined. I also had a problem with all the alchohol burning off right away. This bird was a mistake. People please know birds can be juicy and not dry.

This is the perfect juicy turkey. My family and friends raved about it. I did the brining as stated, then I injected it with butter and jalapeno seasoning. I topped it off with the spices rubbed on and inside. I only had celery, onion, and leeks to put inside. It was fantastic.

This is the only turkey recipe I'll ever use again. Even though I overcooked my turkey, as I generally do with most meat, it was tender and extremely delicious. I used half a bottle of chardonnay, drank the other half. After I flipped the bird (get it?), I sprinkled the breast with garlic salt after basting. Leftover turkey still tender after 4 days in fridge. Thank you and your French friend for this recipe.

Easy, fabulous smell while cooking, moist, delicious! We made the A. Brown brined turkey last year, but all agreed this was better. Cooked faster than I thought and therefore didn't brown as much as I would have liked, so I'll turn it over sooner next time.

I have never EVER made a turkey before and this was the most easiest and the most delicious turkey I ever had. Everyone, including my brother in law that cooks, couldn't get enough of it. I'm making another one tonight. Best recipe and super easy!!

this was a good recipe. I made it for Thanksgiving this year (08), but my Turkey was still dry and there wasn't much flavor. Next time I will do a few things different, like putting the butter and spices under the skin of the turkey before cooking. And if you have a large turkey like I did (26lbs). It is really hard to turn it over. I will have to rethink how to do that. Otherwise, everything was fine.

Cooked this for Thanksgiving with a bigger bird (23 pounds) and it was amazing - the moistest turkey anyone had ever had. People called the next day to ask if there were any leftovers. I'd never "brined" before and I was a little worried, but it was easy and came out flawless. Highly recommended.

I made this for Thanksgiving and it was pretty tasty however My mother in law made a beer can turkey that she injected with seasoning and it was a lot juicer and moist than mine. A little dissapointed but all in all pretty good

i followed the recipe as written except for adding rosemary and basil to the brine. This turkey was the best I have ever made by far. My kids have asked for it every night since Thanksgiving!
