This was good but I didn't really like the croutons with it. I think next time I will add some pasta - other than that I would leave it as is.

Made this for a work lunch yesterday and it got rave reviews. It looked pretty, too! I do have to say I cheated and rather than the oil and vinegar and tomato juice I used Gazebo Room dressing. Otherwise I used all the listed ingredients. We have someone who cannot eat wheat/flour products so I just put the croutons on the side.

This was definitely refreshing and unique. Instead of tomato juice I substituted V-8 (it's what I had on hand), used cider vinegar and vegetable oil, and added 1/2 tsp salt to bump up the flavor. For croutons I sliced pita bread in 1" pizza shaped wedges, sprinkled them with Italian seasoning and sauted them until browned and lightly crispy in butter. Sprinkled with the pizza croutons, people "got it" when I told them it was Pizza Salad, and gave it great reviews.

This was not at all what we thought it would be. I think the tomato "dressing" does it in.
