Nothing says holidays like chocolate and peppermint together, so I decided to try this for Christmas dinner. I only needed 1 pie, not a 9 X 13 pan full, so I used one box of instant pudding and a 1/2 of the ice cream and put it into a store bought graham cracker crust pie shell. I also added 1 packet of unflavored gelatin into the pudding to help with the pie's firmness. The family loved it! I will make it again!!

This is similar to my FAVORITE dessert that my Mom makes. We bake the graham cracker crust and then let it cool. And instead of the pudding mixture though she makes a homemade hot fudge for that layer, it is THE BEST. It does take longer to prepare because each layer needs to cool in the freezer. But at least with this one it's the same "concept" and not bad just not like Mom's!!
