2 cups graham cracker crumbs
3/4 cup butter or margarine, softened
3 tablespoons sugar
FILLING:
1 1/2 cups cold milk
2 (3.9 ounce) packages instant chocolate pudding mix
1 quart peppermint ice cream, softened
1 (8 ounce) carton frozen whipped topping, thawed

DIRECTIONS
In a bowl, combine the cracker crumbs, butter and sugar. Set aside 3/4 cup for topping. Press remaining crumb mixture into an ungreased 13-in. x 9-in. x 2-in. dish. In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in ice cream until smooth. Pour over crust. Chill for at least 1 hour.
Spread with whipped topping and sprinkle with reserved crumbs. Cover and refrigerate for 6-8 hours or overnight.

This is similar to my FAVORITE dessert that my Mom makes. We bake the graham cracker crust and then let it cool. And instead of the pudding mixture though she makes a homemade hot fudge for that layer, it is THE BEST. It does take longer to prepare because each layer needs to cool in the freezer. But at least with this one it's the same "concept" and not bad just not like Mom's!!
