I used the chicken stock that I boiled my chicken in this morning for the Cottage Cheese Enchiladas in place of the water and used a couple tbsp. of butter to saute the vegetables in. I found it needing a little something, so I added a 1/4 tsp. of cumin and a tbsp. of fresh lime juice after tasting it. This was a nice side for the enchiladas, which already had enough going on. I didn't want to overpower the main dish. My husband especially enjoyed this. I think I might add fresh garlic next time, too. This might take the place of the Spanish Rice I USED to make.

This is a great recipe. I did use chicken broth instead of water. I added cumin, garlic and onion powder as another reviewer suggested. I served with Trader Joe's Ahi Tuna...awesome!!

I just made this to accompany my teryaki grilled salmon for tonight's dinner. Delicious! I added shredded carrots(had some I needed to use up) and used brown instead of white rice. This dish is light, healthy and very colorful. It makes a lovely side for fish or chicken. If you want to bump up the flavor, use chicken stock instead of water as one reviewer did and customize the spices to your liking.

really great and easy. my 12 month old kept signing for more! used a bag of uncle ben's 'ready rice' (brown) and squeezed in half a lime, but other than that made as directed. Just needed to add a little salt to taste at the end since I didn't cook the rice.

Wonderful recipe, however like previous person said, it was missing a few things... i spiced it up by replacing of one the 2 cups of water with 1 cup of chicken broth, and adding a tsp of each of the following: onion powder, garlic powder, and cumin

I like this rice, but I thought it was a bit bland. Next time I would add a bit of seasoning, maybe some cumin? It does need a little something though, I just can't put my finger on it. Thanks for the recipe.

Disappointed. The peppers made it too sweet. It needs more spice to compliment the cilantro.

I've made this twice. The first time I followed the instructions. The second time I didn't have garlic or onion so I used 1 tsp onion powder and 1 tsp garlic salt in place of table salt. Both versions were FABULOUS!!! Thank you, Laura!
