  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Whisk chili powder, black pepper, ground cumin, and salt together in a small bowl. Rub spice mixture onto all sides of pork tenderloin. Place tenderloin in a shallow roasting pan.
  3. Roast tenderloin in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
  4. Stir pepper jelly and balsamic vinegar together in a saucepan over low heat until jelly is completely melted, 1 to 2 minutes. Brush pepper jelly mixture over pork tenderloin and continue to bake tenderloin until jelly coating is hot, about 5 minutes more. Let pork rest for 5 minutes before slicing.

Made this last night for dinner. Changed up the seasonings and used a Bourbon Bacon Jam that I had previously made. I added potatoes and carrots to pan and everything was delicious! I'm rating this more for the cooking technique. Was skeptical about the high temp but the roast turned out perfectly!!!

I was looking for a last-minute, easy, pork tenderloin recipe that clearly had some spice to it -- and this definitely fit the bill. I made this for a family holiday gathering, and it was quick, simple and well-received. The rub was great and the red pepper jelly was really what drew me to the recipe. Thanks for sharing! Will definitely make it again.

Very yummy! I also used my mom's homemade pepper jelly. It liquified just fine. Next time, I might try to grill it, then broil with the sauce on top!

wonderful quick go to tenderloin recipe. The sweet hits you first and then the spicy warms up right behind it. I used homemade pepper jelly which is thicker than store bought so mine didn't melt smoothly down - worked just fine though. loved the high heat, fast cooking method .

I used homemade jalapeño jelly. It was spivey but delicious. I took out at about 140 degrees, coated with sauce, covered and let sit. My husband loved it
