A generous measure of vodka and prosciutto is cooked down to its savory essence to flavor a saute of onion, celery and garlic. Simmer with tomatoes, spicy cayenne, oregano, parsley and basil, then stir in half and half. A marvelous sauce over noodles!

Sweet and salty pancetta is lightly sauteed in butter, then cooked in vodka, tomato sauce and cream to make a rich and flavorful sauce for boiled penne. Grate Parmesan cheese over the top and serve warm.

A generous measure of vodka is simmered with Worcestershire sauce and red pepper flakes, then combined with tomato and cream to make a splendidly spicy pasta sauce. Add grated Parmesan to finish, and serve with hot penne.

My Mother's family originally came from Sicily and every family member makes his or her own version - this version came most recently via Brooklyn. Use your favorite meat and Italian red wine for this sauce and serve with your favorite pasta. This also is a great pizza sauce if you leave out about half of the meat. If there are any leftovers, they freeze very well. MANGIA!
