I was really looking forward to this dish, but was quite disappointed. I made it exactly as the recipe stated, and sampled it before serving (you have to make sure your food is good before you serve it:) I thought it was extremely bland and too dry for us, so I decided to throw a few more things in before I served it, without adding a ton more calories (after all, we are going for healthy...thus the making of this recipe). My tweaking it made it surprisingly more delightful than anticipated. In fact, I'm eating some right now as leftovers for lunch. Here's what I did: After tossing everything together at the end, as it calls for, I added about 1/2 to 3/4 cup of 1% milk, another handful of Parmesan cheese, and a small handful of fiesta blend shreeded cheese, as well. I turned the burner back on and stirred that all together until cheese was melted (the milk just kind of soaked right up...made it a little bit creamy). I'm not one to change recipes, but this one needed help. It was probably a 3 1/2 after it was all said and done...and still healthy.
