I wouldn't call this "gourmet" but it was definitely delicious!! I followed the recipe as is, except for wilting my spinach right in the tomato mixture before adding the pasta. It helped with flavor and wilted just fine. I also topped with grated parmesan/romano. Halved the recipe and it was perfect for two of us. Great recipe!

Awesome, I followed the recipe and it tasted fantastic. Here are some tips: Draining the pasta onto the spinach in the colander will wilt them fast but make the leaves stick together. I recommend heating the spinach in with the diced tomatoes. Adding in a few more strips of bacon is fine, the pieces shrink and I found myself with only a few bits here and there. You don't need any olive oil in the pan to fry the bacon, bacon will release a TON of grease which you should keep draining out of the frying pan.

Very tasty, easy to make, and light (perfect for a hot summer meal). Next time, I plan to crumble the bacon more and add more garlic, to help spread these flavors more.

I really wanted to like this recipe because it has all of my favorite ingredients. However, it just did not come together for me. It did not mix well and the flavor was missing something. Will not try this one again.

Really delicious and very easy for those quick, gotta get it on the table dinners. Used whole wheat penne, and tossed in some Kalamata olives at the end. Also added a little dried basil and oregano.

A very good basic recipe. I gave it some "kick" with some red pepper flakes. Otherwise I followed the recipe and enjoyed this dish very much.

I fixed this for dinner tonight and it was really good. I did drain some of the bacon grease and sauted about 1/2 cup diced onion with the garlic but other than that followed the recipe to a T. My husband liked it so that is a plus. I will definitely make this again. It still needs a little something...maybe some kind of cheese or some spices for more flavor...so I will experiment.

Yummy!!! I made a few of the suggested changes! I found the leanest bacon I could find to cut down on the grease/fat. I used a seasoned can of tomatoes which had basil/oregono in it. I drained most of that. I then put the spinach in with the tomato/bacon/garlic mixture and let it wilt like that. I saved about a 1/2 cup of the pasta water to give the pasta a little bit of liquid, and added parmesean and feta cheese and mixed it all in. Talk about flavorful..this will definitely be a normal in my house! Even my 13 month old ate it!!

I loved this recipe. I used turkey bacon as well. I left the tomatoes out because my husband isn't a fan. Had friends over and they loved it too. The second time I made it, I used bow-tie pasta. I also used more olive oil and a little cream to make it more saucey. Delicious! Thanks for the post.

Thought this was really yummy, my mom agreed but my little brother said it was "too flavorful" - he's 15, go figure!!! I used 3 slices more of bacon and the tomatoes I used were marinated in garlic and basil. I also added some Italian blend cheese at the end - YUM!!!

I am rating this 4 stars as I made 2 changes that other reviewers suggested: 1) I used Italian style diced tomatoes and 2) Cooked the spinach with the tomato and bacon mixture rather than wilting with the noodles. It was definitely 5 star with those changes.
