Pecan Pie Tarts

These dainty treats are so easy to accomplish. The cream cheese pastry is mixed, rolled into balls and each pressed into the bottom and sides of tiny tart pans. The pecan filling is spooned in and the pies baked until the filling is set. Garnish each with a dollop of whipped cream and a pecan half.

This is one of my husband's favorite pies. I can also say that it is mine as well, and my children sure go for this one. This pie can be baked in small fluted foil pans to make 8 to 10 individual pies.

For this sweet and rich pie, rolled oats masquerade as pecans and no one is the wiser. Corn syrup, sugar, eggs and butter are stirred into the batter, and when it 's baked, the oats take on the texture and taste of those lovely nuts. Serve with lots of whipped cream.

The home made pastry for this pie is quite wonderful. There 's sugar and an egg worked in, which makes the pastry sweet and very flaky. For the filling, there 's maple syrup, light and dark corn syrups, eggs, butter, sugar, vanilla, and lots and lots of pecans.

There 's lots of honey and pecans in this pie. Honey is heated on the stovetop until bubbly, and then chopped pecans, butter, eggs, vanilla and nutmeg are stirred in. This thick, luscious filling is poured into a prepared pie crust and baked in the oven until set.
