INGREDIENTS
CRUST:
2 cups all-purpose flour
1/3 cup sugar
3/4 cup butter or margarine, softened
1/4 teaspoon salt
FILLING:
4 eggs, lightly beaten
1 1/2 cups light or dark corn syrup
1 1/2 cups sugar
3 tablespoons butter or margarine, melted
1 1/2 teaspoons vanilla extract
2 1/2 cups chopped pecans

DIRECTIONS
In a large mixing bowl, blend together flour, sugar, butter and salt until mixture resembles coarse crumbs. Press firmly and evenly into a greased 15-in. x 10-in. x 1-in baking pan. Bake at 350 degrees F for 20 minutes. Meanwhile, in another bowl, combine first five filling ingredients. Stir in pecans. Spread evenly over hot crust. Bake at 350 degrees F for 25-30 minutes or until set. Cool on a wire rack.

To me, the best part of Thanksgiving is the pecan pie. When I saw this recipe, I thought, what a great way to have pecan pie for Christmas cookies! These are really, really good. The only advice I would give is to make sure you grease the sides and corners of your pan especially well...the sugar and corn syrup is sticky and it's hard to get the cookies out if it's not well-greased. This will definitely become one of my regular Christmas cookies!

I LOVE LOVE LOVE pecan pie, and now I LOVE LOVE LOVE these cookie squares! I used dark corn syrup. And because I used a 9x13 pan, I only used 1 c. of corn syrup instead of 1.5 cups. I kept the crust amount and the amount of pecans the same as the recipe. It turned out GREAT!

OMG these are so good. We wanted Pecan Pie but I hate making pies. This was really easy to throw together. The only thing I did different was to use Splenda for Baking in place of the sugar.

I wanted a pecan pie recipe to make for a large group, and this worked out perfectly. The two trays I made were eaten up quickly, and we were practically licking the pan!

Way way too sweet and sticky for us. No one ate them and I ended up throwing them out. A shame because I like Pecan Pie.
