I usually find pecan pie too sweet. But I had a lot of pecans and wanted to make a pie. When I saw this recipe, without syrup, I decided to try it. This pie is the BEST pie I have ever had; I am usually a chocolate or cream kind of person.
I did add 1/2 more cup of pecans and put half pieces on the top so it would look pretty. also I did not have milk, so I used half & half. I did not have light brown sugar, so I used 3/4 cup dark brown and 1/2 cup white sugar. I had to shell more pecans in the middle of making the pie, so everything sat for a while, too. I followed the recipe for the temps. But covered the crust with foil b/c it seemed to be getting brown very soon. I am not sure why, but the top formed a crust (beautiful, but hard to cut).
I could not resist this pie and told my husband I would only make this pie to share b/c I do not want to get into the habit of eating a whole pie between just us. : )
I am still craving it 2 weeks later. The filling was rich but not as sweet as the syrup pecan pies. This was truly a gourmet pie. Others who tasted it said it was the best pecan pie they ever had, too. Will be making again to "share."
