Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup ground pecans
  • 54 pecan halves

Directions

  1. In a mixing bowl, cream shortening and sugar. Add egg and mix well. Combine flour, baking powder, baking soda and salt; add to the creamed mixture. Stir in cracker crumbs and ground pecans; mix well.
  2. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Place a pecan half in the center of each cookie; press down lightly. Bake at 350 degrees F for 9-11 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.
