2 cups sugar
1 cup water
1 (7 ounce) jar marshmallow creme
1 teaspoon vanilla extract
1 1/2 cups chopped pecans

DIRECTIONS
In a large heavy saucepan, combine the sugar and water. Cook over medium heat, without stirring, until a candy thermometer reads 250 degrees F (hard-ball stage). Remove from the heat; stir in marshmallow cream, vanilla and pecans. Continue stirring until candy cools and begins to hold its shape when dropped from a spoon. Quickly drop by heaping teaspoonfuls onto waxed paper-lined baking sheet. Store in an airtight container at room temperature.
FOOTNOTE
We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212 degrees F. Adjust your recipe temperature up or down based on your test.

Divinity can only be made in certain weather. It cannot be made when it is raining outside or when it is overcast (cloudy). I also recommend one cup of sugar instead of 2 because the marshmallow creme that you add also has sugar in it. All the sugar from the marshmallow creme AND the 2 cups of suger is overwhelmingly sweet.

Yes the picture I posted looks nice, but it was hard and crumbly!... Didn't have that soft marshmallow texture I was looking for in divinity! I love divinity and it was my first time making candy in a long time... I will try again, because maybe I over cooked it! I had to throw this batch away!

I make this for my mother-in-law and to quote her " its the best", I do add a little more nuts and vanilla, and stir until it loose the shine.
