Sorry, but the mayo ruined the whole recipe, IMO. I was going to substitute sour cream or butter, and I should have listened to my intuition. The only thing you can taste is the mayo, and there's only 1/4 cup of it. Cheese balls should be the perfect balance of taste, with no one ingredient standing out so much, and this one wasn't balanced. I printed this out to try because it contains dates, which I have a lot of right now. Those were fine in the recipe, but I won't ever use mayo in a cheese ball again...

FANTASTIC!! Didn't change a thing! PERFECT! I used Graham Crackers & Salted Pretzels instead of crackers to dip. YUMMY!!

I love it! I used thinly gated asiago cheese because I didn't have cheddar. I was afraid since it is very sharp cheese, but it is great! I added roasted salted sunflower seeds to the pecan because I liked the salty/sweet flavor it gave the cheese ball. Now it's in the fridge for tomorrow, I licked the bowl and I am tortured to go get more...

I made this to take to a party tonight because I had all the ingredients left over and didn't have to go out and buy anything. I was a little doubtful about the dates mixed with the cheeses, but you know, that little bit of sweetness really made it delicious. Thanks for a great recipe. We love it!

Update 01/01/07: after trying this with everything from crackers to pretzels to chips, I finally spread some on a slice of homemade bread and found the perfect marriage for it--it would be great as a finger sandwich! Original rating on 12/30/06: I made this for my family, and although one person gave it 5 stars, I am rating it 4 star. I do love the dates with the cream cheese, but it needs another layer of flavor. Thanks for sharing, Sue!
