Toasted Coconut, Pecan, and Caramel Pie

Submitted by: Patrice
The filling for this decadent pie is a combination of a very creamy, cream cheese and whipped topping. Then toasted coconut and caramel sauce is sprinkled and drizzled over it. Another cream cheese layer is spooned on, and then the pie is finished with more toasted coconut. This recipe makes two fantastic pies.

PECAN PIE was always requested by the family for special occasions. When we became empty nesters, it was hard to give up some of our family favorites when we found that leftovers were too much for the two of us. Smaller recipes were hard to come by, so I was delightful to find this one. Now we can have pecan pie - fresh - just for the two of us. -Noreen Johnson, Leesburg, Florida

This is the treasured 'Golden Oldie' that my grandmother made so often whenever we'd come to visit. Grandma grew her own pecans, and we never tried of cracking them and picking out the meat when we knew we'd be treated to her special pie!
