Pear Lime Gelatin
SUBMITTED BY:
Sandy Jenkins
"Packed with pears, this jolly gelatin salad is a light and refreshing treat. My Mom knew that fruit served in this fun form would get gobbled right up. She also liked it because the bowl looked like a sparkling jewel on our dinner table."

I used strawberry gelatin since I didn't have lime, and it was very good. My husband loved it.

This is known as "Green Salad" in my partner's family, and they insist on having it at every holiday. (I'm not kidding!) As someone that doesn't really like the texture/taste of pears, I like this salad. We typically go lighter, using lowfat cream cheese, sugar free gelatin, low fat whipped topping, and light pears. I like that better than the full fat, sugared version, and I feel less guilty about indulging in dessert.
