Peanutty Sauerkraut Coleslaw

INGREDIENTS

  • 1/3 cup wheat germ
  • 1 cup vanilla yogurt
  • 1/3 cup peanut butter
  • 1/2 cup white sugar
  • 3 cups sauerkraut, drained, rinsed and squeezed dry

DIRECTIONS

  1. Toast the wheat germ in a skillet over medium-high heat, stirring constantly, until browned and fragrant, about 5 minutes. Pour wheat germ onto a plate, and set aside to cool. Place yogurt, peanut butter, and sugar into a blender, and blend until smooth.
  2. Toss sauerkraut with peanut dressing; refrigerate for 30 minutes to allow the flavors to blend. Toss with toasted wheat germ just before serving.

Umm....I really want to rate this recipe highly, but just can't bring myself to. It's quite the strange combo of ingred's, and I'm an adventurer when it comes to food. But this was just...a little too sweet, & too weird. You definitely don't need the extra sugar. Yogurt & peanut butter are already sweet enough. I'll be looking for other ways to use wheat germ. Sigh.
