This was delicious but I made a few changes. I mixed peanut butter, chopped walnuts, soy sauce, rice vinegar, and a few pinches of sugar. I added this peanut sauce to the steamed carrots. My boyfriend loathes carrots and we both thought this dish was amazing!

This dish was incredible! I was looking to do something new and different with carrots. I served this at dinner tonight and my husband and son loved them! Me too! Oh, and I used brown sugar. :)

Very nice! I didn't have peanuts but still turned out delicious; I'd add less butter and sugar next time though.

At first I did not think that this would be very good. I was just looking for some way to fix my left over carrots. However, my family loved them. I thought they were different, but my husband and children ate my share.

This was an excellent recipe. I am severely allergic to peanuts as are many others so I substituted cashews for the peanuts. Because my julienne peeler makes thinner slices of carrots than in the picture, I was able to steam the carrots over salted boiling water which adds to the nutritional value. My vegetabelly challenged teens even gave it a big thumbs up and there's no trace of leftovers anywhere. Thanks for a great vegetable recipe!
