Peanut Butter Squares

"The combination of peanut butter and oatmeal makes these bars popular. My children love them with a cold glass of milk, and I've taken them to many church suppers, too."

INGREDIENTS

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2/3 cup peanut butter
  • 2 eggs
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups quick-cooking oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • ICING:
  • 1/3 cup butter, softened
  • 2/3 cup peanut butter
  • 2 cups confectioners' sugar
  • 1/3 cup milk

DIRECTIONS

  1. In a large mixing bowl, cream shortening, sugars and peanut butter. Add eggs, one at a time, beating well after each addition. Add water and vanilla; mix well. Combine the flour, oats, baking powder, baking soda and salt; beat into the creamed mixture until combined. Pour into a greased 15-in. x 10-in. x 1-in. baking pan.
  2. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean. In a small mixing bowl, beat the icing ingredients until smooth. Pour over warm bars. Cool on a wire rack.
