I made this into a lighter treat. I used "free" whipped topping, cold fat-free evaporated milk (for a creamier and richer flavor) and sugar free pudding mix. The recipe didn't specify what kind of peanut butter to use, I used chunky. I did not bother to make two layers of pudding and whipped topping--I folded the whole container into the pudding/peanut butter mixture. My family all liked these but they didn't really care for the Nilla wafers in the bottom. The pudding part was really the best part. It really did remind me of the Pudding Pops that I ate as a child. When I make this again, I'd make a whole pie out of it with either a graham or Nutter Butter crust OR I'd make Pudding Pops out of them, using dixie cups and popsicle sticks. I'll try that, then re-review. EDITED REVIEW: I made this a second time the next day into a pie, using a homemade Nutter Butter crust (1 1/2 cups crushed mini-Nutter Butter sandwich crackers, 6 tablespoons butter) and then making the "filling" as I did before with the "free" whipped topping, cold fat free evaporated milk, chunky peanut butter and sugar free chocolate fudge pudding mix. I poured the filling into the homemade crust, then froze it until dinner. I took it out as I was cleaning up after dinner, it was ready to cut into slices by the time I was done. My family thought it was one of the best pies I've ever made. They thought it was much better that way. My husband ate two huge pieces, topped with additional "free" topping.
