Ingredients

  • 2 cups sifted all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup JIF® Crunchy Peanut Butter
  • 2 tablespoons butter or margarine
  • 1 cup milk
  • 2 beaten eggs
  • 1/2 cup SMUCKER'S® Currant Jelly, melted
  • 1/2 cup finely chopped peanuts

Directions

  1. Preheat oven to 400 degrees F.
  2. Stir together flour, sugar, baking powder and salt. Cut in JIF® and butter or margarine until mixture resembles coarse crumbs. Add milk and eggs all at once, stirring just until moistened.
  3. Fill greased muffin pans 2/3 full.
  4. Bake for 15 to 17 minutes. Immediately brush tops with melted jelly, dip in peanuts. Serve hot.

kind of dense and dry. basically a peanut butter muffin with very little peanut butter flavor....
