These are AWESOME. They are not an ice cream sandwich. They are a great homemade substitute. I have 6 children and they all love them. My husband loves them too!

Although the kids enjoyed these, I think I'll keep looking. The graham crackers seem to play the role of something to hold on to, not anything that adds to the taste. I enjoyed the peanut butter taste in the filling, but the consistency didn't do it for me. Worth a try though- I did think the process was easy, and like I said, the kids enjoyed them.

I made these for a recent after-baptism party. The weather was beastly hot and humid, so I was looking for something that didn't require use of the oven. I changed the recipe a bit--used banana cream pudding instead of vanilla, and I added nuts to both flavors. They were very easy to make! I wrapped them individually so they'd be easy to grab, and they went over VERY well! All 36 were quickly gone and people were looking for more! Thanks for this recipe--it's a keeper!!
