Easy, tasty, different! I used vegetable broth (since I'm a vegetarian) and couldn't find udon noodle :( so I used fetucinni. Yum!! Will make again and again. Served with edamame.

This is exactly what I was looking for! I had noodles with peanut sauce at a nice Asian restaurant the night before and had to have more. I added cilantro along with the scallions and it was perfect. I will be making this one over and over!

This is great! I've made it twice: the first time I used ground ginger, linguini no chili paste, no green onions, no peanuts (but chunky peanut butter), and it was great, but needed a kick. The second time, I used fresh ginger (much better), chili paste (found in the ethnic section - named "Thai Chili Garlic Paste") it definitely added some kick), and thin spaghetti (I think the linguini was better). I doubled the sauce, and added some chicken the I had cooked with cracked pepper. It was amazing, and I will continue making this.

I served this at a Hawaiian-themed party for my Mom's 60th birthday. It was good...the noodles definitely absorb a LOT of the sauce. They are very dry. Next time I will up the sauce, add way more chopped green onion and a few chopped veggies, like red bell pepper, peas and/or carrots. Good base to start with.

For those with nut allergies or are cooking for someone who does, I used Sunflower Seed Butter (from Trader Joes)instead of Peanut Butter. No one could tell and it was quickly gobbled up. If you like extra sauce or plan on adding protein (chicken, shrimp) to the sauce, I suggest tripling the recipe. I doubled it, added shredded chicken and barely had enough sauce to cover the noodles. I served this over capellini. Very good and so easy!

OMG This good and easy to make and every one love them.I did add a 1 Tablespoon of sesame oil to this it brought out alittle more kick to it but not spicey I was already ask to make this again....and will.

I liked it but everyone thought it was okay. I added more peanut butter than it asked for maybe that's why. I added some onions, snap peas, tofu, and chicken breast to make it a filling dinner entree.

Amazing! Definitely cut down on the soy sauce, and make sure to add enough pasta, or else this becomes very salty. With the right proportions, it's terrific.

Yum! These noodles turned out great. I added about 2 Tbps cilantro and 1/3 cup shredded carrots. I did not add the peanuts because I used chunky peanut butter (2 Tbsp instead of 3). The hot chili paste really made the dish great. Thanks so much for posting this recipe. It will be a regular in our house.

I love Thai food and my husband doesn't. I decided to try this recipe anyway just to see if he "might" at least not hate it. Afterwards he told me he LOVED it. I added chicken, but stuck to the recipe. Delish.

YUM! Quick, easy, uses stuff we tend to have on hand, and guest-worthy! Changes we made: Used a big chunk of ginger to flavor the sauce (rather than chopping it -- I don't care for chewing on ginger, but the flavor and fragrance are GREAT in this dish). We also added a little shredded cabbage, sugar snap peas, and cubed baked teriyaki tofu at the very end, for a complete protein dinner. Wonderful. Will make often! Thanks!

I added a bit of extra chili paste, threw twice the amount of green onions in instead of a garnish, and didn't add the peanuts. I cooked the noodles a bit (less than 5 mins) in the sauce and they soaked it right up. FANTASTIC!! Salty, sweet, spicy these noodles have it all!! Thx for the recipe =))

Everyone loved this. I didn't have the chili paste when I made it and it was still yummy. I am making it again today with the hot chili (but all I could find was the oil, not the paste.) Hopefully it will turn out okay.
