I have made this several times now, and it is the perfect recipe for adding whatever veggie is on hand and in season. I've used carrots, broccoli slaw, cabbage, zucchini, and eggplant...all were excellent!

This is a must try dish. I was a bit surprised it tasted so good. Call it Asian Influenced Comfort Food. From start to finish it took under 15 minutes to prepare. I used vegetable broth since I didn't have chicken stock on hand. The chopped peanuts on top are vital. They add much needed texture to the dish. You could add your favorite protein to make this a one dish meal.

My husband has a peanut allergy so I used tahini (sesame paste) instead of the p.b.. I dont' know how many people with a peanut allergy will be looking at a recipe with this title but it was delish! I don't normally have Udon noodles on hand and cooked this last minute but I just used the pasta I had on hand which turned out to be rotini. Random I know but if it was yummy with that, I bet you pretty much could use any pasta and have it turn out well. Oh and I just used some normal onion b/c it was what I had on hand. I LOVED THIS DISH!

I gave this recipe five stars because this is the ultimate dish! It tastes just like take-out! However, I added a bunch of veggies such as onions, broccoli, peas and shredded carrots. I also added chicken-- all of these ingredients made it taste like paad thai. So good! But add the veggies and chicken!!! And don't forget the chili sauce for the extra kick. (You also don't have to use fresh ginger, just buy pre-minced ginger.)

Excellent flavors, and so adaptable. SAVE TIME by blending hot pasta water into the sauce ingredients instead of cooking on the stovetop. I used less garlic, and less ginger, grated to taste. I only had fettuccine, so I used that. I also liked a later addition of sesame oil, as well as a few splashes of rice vinegar. Cilantro was so yummy too! The sauce seemed way too thin, but thickened perfectly upon standing. Mr. Smiley says to make this a weekly standard. ~Cucumbers and red pepper strips, along with steamed broccoli, made a nice accompaniment.

These noodles had a great flavor although next time I would try adding a few other ingredients to make it more interesting. Perhaps some chicken and other vegetables would make this recipe a five...it is really close. Enjoy!

Excellent! My family (even the picky eater) really enjoyed this. The changes I made to make this dish more kid-friendly were: I used whole wheat spaghetti, didn't use the chili paste & used 1/2tbsp of ginger instead of the full amount. Also, right before adding the sauce I added 1tbsp of equal parts cornstarch and water to thicken up the sauce. It thickened instantly and to me seemed perfect. This way the sauce perfectly coated all the ingredients I added to the pot. With that said, to make this a meal I added 2 chicken breasts, baked & sliced. I also added 12oz of medium sliced carrot sticks (about 4 large carrots I believe) to the water when I was cooking the spaghetti. I topped the dish off with green onions as directed. Oh my goodness... what a fantastic meal. This will now become a staple in our monthly meal plan!

This was a very simple and quick recipe. I substituted water in place of the chicken stock to make it vegetarian. My only complaint was that it was a little sweet. In the pan it tasted fine, but after time it seemed to get sweeter. Next time I'll add more soy sauce.

Very good recipe! Wonderful as is, or with 1/2 teaspoon of cayenne pepper to make it a little spicy. I like it chilled with veggies cut into match sticks (broccoli and carrots are good) that have been lightly steamed and then top it with sesame seeds.

Amazing. I highly suggest using the chili paste. I used egg noodles too and it was a good alternative to the udon noodles which I couldn't find in the market, must go by another name as well.

This dish was easy to make, but it was a little sweet for my taste. I wound up adding a little more chili sauce and a bit of garlic paste for an extra kick. Next time I think I will reduce the peanut butter, cut out the honey, and add in some sauteed garlic instead of paste.

Really easy and tasty recipe. I used egg noodles because that's what I had in the pantry, and added carrots, broccoli, and extra firm tofu. I was very happy with the amount of garlic in the dish, but could see how people who aren't so into garlic might be offended. Husband said he would recommend the dish to a friend.
