2 cups sugar
1 cup sour cream
1/8 teaspoon salt
1 cup peanut butter*
1 teaspoon vanilla extract

DIRECTIONS
In a heavy saucepan, combine the sugar, sour cream and salt; bring to a boil. Cover and simmer for 5 minutes. Uncover and cook over medium heat until a candy thermometer reads 238 degrees F (soft-ball stage). Remove from the heat; stir in peanut butter and vanilla. With a wooden spoon, beat until thick and creamy, about 5 minutes. Transfer to a buttered 8-in. square dish. Cool and cut into squares. Store in the refrigerator.

I have tried a lot of peanut butter fudge recipes and this is by far the best. It is creamy, easy to make, and relativly fast compared to others. My entire extended family raved about it for weeks! :)

easy and delish. who'da thought of sour cream in pb fudge- but it was great.i even used light sour cream- and no probs there. i gave it only four stars cause i usually like it a bit sweeter. but that's my own preference- i just have a bit of a SWEET TOOTH. i think the hardest part was waiting until it reached that 238 degrees F. but, that's expected- i'm just impatient!

This was soooo good! I thought it was very sweet, even using the healthy peanut butter. I wonder if it can be made with Splenda??
