Here is what I did: Slice chicken lengthwise into 1 inch strips. Cook in Panini maker on medium-high heat until chicken is no longer pink. Brush with peanut butter sauce and serve over rice. YUM. I liked the sauce but my husband couldn't get past the peanut butter on chicken weirdness.

This was absolutely delicious. I baked my chicken breasts with half the sauce on them and then served the rest for dipping bites. My boyfriend LOVED it and I did too. The sauce was out of this world yummy!

We love this recipe! We have made it 4 times in the past 2 weeks. Sometimes I use a little red hot sauce instead of (or in addition to) the red pepper, but other than that I follow the recipe. I have made the sauce ahead of time and refrigerated it, and then just microwaved it when I was ready to use it. It thickens in the fridge but comes out of the microwave the perfect consistancy. This helps for quick weeknight dinners. We will definitely make this again!

I really liked this! I'm a fan of peanuts in asian food, so I was anxious to give it a shot. I replaced half of the lemon juice with lime juice and think that I'll replace it fully with lime next time. I think that fresh ginger (instead of ground) would make a wonderful addition to this sauce as well. I went with one chicken breast per person, sliced into one inch strips and skewered on bamboo skewers, then grilled. I doubled the sauce and used half of it as a marinade, but I think that I'll just brush it on during the grilling process next time that I make it.

Very easy to make and the flavors were great together. We steamed up some white rice and a bag of California stir fry mix to serve with this instead of the cabbage. The broccoli, carrots and sugar snap peas were an awesome addition.

I thought this chicken was pretty good. I had never had any kind of peanut chicken before so really had nothing to compare it to but I did think it was quite tasty. My husband did not like it all and my daughter wouldn't eat it either, but she's 2 so I don't put a whole lot of stock into what she won't eat.

The sauce in this recipe has allowed me to make the most authentic tasting "Chinese" dish I've ever attempted - I always fail miserably at getting that right Chinese restaurant flavour, but this recipe proved tastier, spicier, less greasy and more eye-appealing than our local restaurant. I made this recipe yesterday and I have to say, it was absolutely fantastic!! I will absolutely make it again. I may, next time, either cut down on the soy or use low sodium soy because I found it a bit salty...but the flavor is just incredible...thank you for sharing this with us.

This recipe is awesome! I have made it a couple time and it is always a hit. Instead of making skewers I slice the chicken and add it to the cooking sauce (continually adding water to keep the sauce thin). I then add green pepper and onion and when all is done I wrap them up in tortillas and it is a fast, delicious meal. Thanks for sharing this recipe!

This recipe is so authentic, everyone who tries it LOVES it and says, "Wow that tastes so authentic!" Thank you for such a fantastic recipe. My husband LOVES this, I had to make a bulk batch of the peanut sauce and freeze it so he can add it to everything. (I froze some in a peanut butter container, and some in an ice cube tray so we have little cubes when we don't need to thaw the whole batch) It also goes beautifully with the "Dad's Pad Thai" recipe on this site (i use soy sauce instead of fish sauce), my husband will even add the peanut sauce to that as well. Thanks for a fantastic recipe!

Awesome recipe! Sauce was easy and quick to make, and the skewers cooked in a flash on the grill. The longest part was waiting for the coals to heat up!

I actually forgot to put the soy sauce in the sauce! and i couldnt figuire out why it was clumpy in the sauce pan so i added white wine..than i marinated it for a couple hours in the frig, We than added the soy sauce when it was on the grill! it was yummy!!!

FAN-FREAKIN-TASTIC! I marinated the chicken in half of the sauce in the fride for a couple hours before grilling. I really should've basted them during grilling, but just didn't...but even so they were still great straight off the grill. If you just want a hint of flavor, do it that way--still very delicious, and would accommodate anyone who was weary about putting chicken together with peanut butter. Excellent either way. My boyfriend raved about this during the entire meal and said it was a keeper!
