INGREDIENTS
1/2 cup creamy peanut butter
1/2 cup water
1/4 cup soy sauce
4 garlic cloves, minced
3 tablespoons lemon juice
2 tablespoons brown sugar
3/4 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes
4 boneless, skinless chicken breast halves
2 cups shredded red cabbage
Sliced green onion tops

DIRECTIONS
In a saucepan, combine the first eight ingredients; cook and stir over medium-high heat for 5 minutes or until smooth. Reserve half of sauce. Slice chicken lengthwise into 1-in. strips; thread onto skewers (if using bamboo skewers, soak them in water for at least 20 minutes). Grill, uncovered, over medium-hot heat for 2 minutes; turn and brush with peanut butter sauce. Continue turning and basting for 4-6 minutes or until chicken juices run clear. Place cabbage on a serving plate; top with chicken. Sprinkle with onion tops. Serve with reserved sauce.

This was really good but just didn't come up to 5 stars for our family. I think it was a bit too thick. But definitely good and worth preparing! Maybe we just had a picky night or something. It was easy enough to prepare for my 6th grader which is nice as well.

This was quite flavorful and easy to make. I had only had peanut sauce in a restaurant before but this really tasted authentic. I used chicken tenders and didn't even bother with the skewers. Instead of grilling I simply cooked them in a non-stick pan while basting with the sauce. All in all, it came out great - I would definitely make it again!

This recipe is so authentic, everyone who tries it LOVES it and says, "Wow that tastes so authentic!" Thank you for such a fantastic recipe. My husband LOVES this, I had to make a bulk batch of the peanut sauce and freeze it so he can add it to everything. (I froze some in a peanut butter container, and some in an ice cube tray so we have little cubes when we don't need to thaw the whole batch) It also goes beautifully with the "Dad's Pad Thai" recipe on this site (i use soy sauce instead of fish sauce), my husband will even add the peanut sauce to that as well. Thanks for a fantastic recipe!
