Peanut Butter Banana Bread

INGREDIENTS

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed ripe banana
  • 3/4 cup chunky peanut butter
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

DIRECTIONS

  1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add bananas and peanut butter; mix well. Combine the flour, salt and baking soda; add to creamed mixture.
  2. Transfer to a greased 9-in. x 5-in. x 3-in. loaf ban. Bake at 350 degrees F for 70-75 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Loved the flavor of this bread! You can definately taste the banana, and the peanut butter. It did come out a tad dry. Very dense and filling. I had to use foil to cover about the last 30 minutes of cook time, because the top was turning way to brown.

Good and easy! I added chocolate chips, vanilla, and cinnamon. I also used 1/2 c. brown sugar and 1/2 c. white sugar, instead of all white sugar. Thanks for the recipe!

I increased the peanut butter to 1 cup (I only had smooth) and made muffins instead of bread since I couldn't find my loaf pan. the recipe yielded 21 muffins (cooked at 350 for 25-32 minutes, they came out beautifully), and they disappeared in days.
