Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup chopped pecans
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 egg, lightly beaten
  • 1/2 cup peach or vanilla yogurt
  • 1/2 cup butter or margarine, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped peeled fresh or well-drained canned peaches

Directions

  1. In a large bowl, combine flour, pecans, sugar and baking powder. Combine egg, yogurt, butter and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in peaches. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 15-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
