Peach Salsa

INGREDIENTS

  • 20 tomatoes, chopped
  • 6 onions, finely chopped
  • 5 fresh peaches - peeled, pitted and chopped
  • 5 pears - peeled, cored and chopped
  • 1 green bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 4 cups white sugar
  • 1 cup distilled white vinegar
  • 2 tablespoons salt
  • 4 tablespoons pickling spice, wrapped in cheesecloth

DIRECTIONS

  1. In a large saucepan, bring to a boil the tomatoes, onions, peaches, pears, green bell pepper, red bell pepper, sugar, vinegar and salt. Reduce heat. Place the pickling spice into the mixture. Stirring frequently, simmer 1 1/2 hours, or until volume is reduced by half.
  2. Discard spice bag. Transfer the mixture to sterile containers. Store in the refrigerator until use.

this recipe is a complete waste of time and ingredients. Whoever submitted this has absolutely no idea what salsa is or what it is supposed to taste like. I tried one taste. If I could give a negative star rating I would.

This is a wonderful fruit salsa. I noticed another reviewer said the person submitting this recipe didn't know what salsa was and what it was supposed to taste like. I think the reviewer doesn't know what you're supposed to do with FRUIT salsas. This is wonderful on pork chops and chicken from the grill. This is NOT salsa to dip your chips in! Wonderful flavor, great way to use up the abundance of wonderful fresh local peaches on my kitchen counter. Thanks for sharing your recipe.

I made this recipe in 2004 and canned it. I cut the sugar and added hot peppers. We really like it and I will make it again this year. We like it with chips.
