Ingredients

  • 6 sweet potatoes, peeled and sliced
  • 1 (16 ounce) package frozen peach slices
  • 1/4 cup butter
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 cup coffee flavored liqueur
  • 1/2 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  2. Arrange 1/2 the sweet potatoes in the bottom of the prepared baking dish. Layer with 1/2 the peaches, and dot with 1/2 the butter. Repeat layering with remaining sweet potatoes and peach slices. Sprinkle evenly with lemon juice, brown sugar, and ginger. Dot with remaining butter, and sprinkle with coffee flavored liqueur.
  3. Cover, and bake 1 hour in the preheated oven, or until sweet potatoes are tender. Remove cover, sprinkle with pecans, and continue baking 10 to 15 minutes before serving warm.
