This was a fantastic way to use up substandard peaches - they were a bit lacking in flavor and on the edge of mealy. My choice was to throw them away or give bread a chance. Because of the poor quality of the peaches, I did use 1/2 brown sugar, 1/2 white, and tossed in a Tbsp of peach schnapps (s suggested by others). This bumped up the flavor. Even my son, who thinks peaches should ONLY be eaten fresh, loved this bread. Great toasted!

With a few alterations, this is one of the best fruit breads ever! I used 2 cups of (fresh Alabama) peaches, doubled the vanilla (no almond extract), subtracted the nuts, added cinnamon, and, instead of water, used a combo of 1/6 cup of water and 1/6 cup applesauce. It needed about 15 mins. longer in the oven that way, but what came out was a wonderful, dense, and, yes, "cobberly" bread!

This is gooood! I was looking for a recipe to use my frozen-fresh peaches and this worked great. I used the juice from the peaches instead of water(helped add more peach flavor), doubled the vanilla (no almond extract) and added some cinnamon & nutmeg. It turned out very moist with a light peach flavor. Loved the brown sugar and pecans on the top-yummy addition!

I replaced the oil/water for equal amount of apple sauce unsweetened. It is healthier that way. I used 1 very over-ripe peach and 1 ripe banana. The recipe came out very yummy. It's a heavy bread. I had to cover bread with tin foil from minute 30-50 because the top was browning too quickly. Maybe it was because I used a toaster oven.

This is a gorgeous bread but certainly not what I expected. As many other reviewers said, there wasn't enough peach flavor (even when adding an extra 1/2 cup), and I felt the almond extract was an overwhelming flavor that most definitely took away from whatever peach flavor there may have been. I did follow some of the other reviews by substituting 1/2 the sugar with brown sugar and adding some cinnamon to it (what i think defines a peach cobbler). This is a great bread, but if you're looking for a truly flavorful "peach" bread use the Peach Bread recipe from allrecipes.

So delicious I just ate 1/2 a mini loaf by myself! I followed some others' suggestions and upped the peaches to almost 2 cups chopped; substituted water with 1/3 cup oil and applesauce (1/2 each); added cinnamon and nutmeg and left out almond extract. Definitely a keeper...this bread is to-die-for!!!

This recipe is moist and delicious. I added 1 t cinnamon and increased almond extract to ¼ t. and 2 c. peaches (diced) instead of one. Peaches are in season now and cheap so looked for recipe to use some up.

I really enjoyed this recipe. I don't care much for nuts, so next time will omit those. I chopped some canned peaches and will double them next time as I prefer more peach taste. Having said that, it was a great recipe and I can't wait to make it again.

This is SO GOOD!! I've made this about half a dozen times now, and it has always turned out superb! Like someone else suggested, I added a little cinnamon (1 tsp...maybe a little more? I didn't measure), and double the almond extract. Also, I had no pecans (don't really care for them anyway), so I left them out. I absolutely loved the flavor and it was so soft, moist, and sweet. The kids and hubby LOVE this, and I even took it to my daughter's preschool for snack and most of the kids loved it (and all their moms wanted the recipe)! Definitely a keeper!

This was so good. I actually made muffins instead of bread. Using my convection oven, it only took about 25 minutes to bake. My boyfriend doesn't like peaches, and even he loved them. There was even a woman from work I don't even know who had a muffin and tracked me down to get this recipe. Thanks for a winner!

I made this early this morning, before it got too warm. Only changes I made were doing half brown sugar/half regular sugar and added a little cinnamon and nutmeg. Oh, and I omitted the nuts because I didn't have any. This really got brown halfway through so I had to place a piece of foil over the top to keep it from burning on top. I think that next time I'll take some suggestions from other reviewers and either replace the water with oil or use a full stick of butter. I'd like to try it with the peach schnapps, too. It's an okay bread. I'd just like to bump up the flavor a bit more. I'm not real impressed with it, as is. Seems to me that it took a little more prep work from me for something that was lackluster.

After reading some of the reviews, I changed a few things otherwise I would have given it 5 stars. I changed the peaches to 2 1/2 cups with the juice, added 1 tsp cinnamon and changed the water to oil. It still didn't have enough peach flavor for my family so I think next time I make it I will do as another reviewer suggested and add a TBSP of Peach Schnapps. But overall, a great recipe!!! Thanks for sharing

I loved this and definitely think its a five star recipe. I have to say that my family seemed to think it was a bit 'much'--maybe heavy/sweet, that sort of thing. I say it was perfect. We took it camping.
