I did not have any fresh mint, so I substituted dried instead. The flavor of the dish was wonderful and the texture was good the first day. However, upon sitting overnight, the juice from the peaches combining with the vinegar left the salad a soggy mess. Very good, but must be enjoyed the first day.

My husband was the first to make this and it was delicious. The second time he made it he added a bit of cilantro. It was just as awesome. I made it and used nectarines and it was delicious. We use splenda and just a bit of it as the fruit is so sweet. I have passed this on to many people. We absolutely love it. We use it on a salad with barbecued chicken as a salsa and don't put the chicken actually in the salad with fruit. Great! Totally a special find!!

We just picked some Peaches in Michigan and I was looking for a salad recipe that incorporated peaches. This was awesome! I will definitely make this again. Super Easy, but different.

Fresh Georgia vegetables are coming in and the peaches are beautiful. This recipe is light and delectable. The mint dressing really sets it off. We love it!

This is a refreshing and delicious summer salad. I served it over a bed of chopped lettuce. Any leftover mint you might have can be chopped up and added to the chopped lettuce.

I was looking for something different to do with cucumbers. Since peaches are also in season- this was an excellent choice. I was not sure how it would turn out but it was great! I served with lettuce in a flour tortilla wrap.

Excellent! Subbed Mango for Peach because the grocer didn't have any nice peaches. Added a variety of veggies, leftover grilled chicken and 200g multigrain fusilli. Will be making again!

I recommend this recipe. The blend of flavors comes together wonderfully - loved the mint. It's very healthy, also! Would be perfect for a luncheon. I served mine on fresh spinach rather than iceberg for the added vitamins & sprinkled low-fat feta around the plate for a kick. I'll make this again-thanks Priscilla!
