A nice change from mayo dressing. I liked the water chestnuts in the salad, but I would suggest chopping them into smaller pieces. Also found the salad a bit dry after mixing, so I mixed up some more dressing. Grated carrot was a good addition for color as well as to add another veggie.

This was pretty good. I think I put in too many water chestnuts. I would use less next time, and make up extra dressing, because it seemed to need more. It would also be good with shredded cheese added.

This is a very tasty version of the usual pea salad. I didn't have red wine vinegar so used rice vinegar instead. Yummy! Thanks for sharing.
