Mmmmm...I love pumpkin bars! I greased and floured my pan and chose a different frosting recipe, I like more cream cheese and more sugar. I wish I would've added some vanilla to the batter though.

This recipe is fool proof. Even with adjustments it turned out great. I substituted half of the oil w/applesauce and replace 2/3 c white sugar with brown sugar. They were moist and tender. Substituted maple extract for vanilla (b/c I was out) and topped with toasted walnuts. My co-workers devoured them!

This is an awesome, awesome recipe. Even just taste testing the batter, I can easily say it beats any pumpkin pie or cake that I've ever had! (But, don't tell my aunts that) I made adjustments similar to many reviewers. 30oz can of Libby's Pumpkin Pie mix...I don't think it would have been as tasty otherwise. Cut down the sugar to 1.25 cups...I think brown sugar would have been really good here. Maybe .75 cups each. I added a little extra splash of vanilla because I didnt think it could go wrong and I added a teaspoon of pumpkin spice to the mix and sprinkled cinnammon on top before I baked them. I made mine in greased and floured 8x8 pans (they won't really be bars...more like slabs). DO NOT use a different icing. I used the Cream Cheese Frosting 2 on this site and was sadly dissapointed. Give the icing recipe on here a try, I wish I had!

These were excellent! I myself, unlike many of the other reviewers here, was looking for something more "cake" like. Here's the small changes I made: I added 1 t. pumpkin pie spice and 1/2 t. nutmeg to the "cake mix". I used a standard cake pan and baked for 35 minutes. For the frosting I used 8 oz. cream cheese and 2 t. vanilla, I kept the powdered sugar at 2 c. It turned out wonderful! Both my husband and I couldn't get enough of it! A wonderful "autumn cake"! Yum!

These were great! I added more pumpkin tho.....I used a 30oz can instead of 15oz. They were very moist & springy! I will be making these again!

I made these exactly as written...which is a switch for me! I'll admit that they do have more of a cake-like texture than a bar (?), but I'm willing to forgive that because they taste very good! I'm not a big frosting fan, but my family is. I think I'll look for a different frosting. This one was ok, but not the greatest. Thanks!

This recipe was great! More of a cake though than a firm bar. The only thing I added was some Pumpkin Pie Spice. Everyone was crazy about them - saying that they were even better than the awesome carrot cake next too it. Great for special occasions, but if I were to make for home, I will try to lighten it up - lots of fat and calories as is.

Delicious! Baked in a 9x13 and an 8x8 to make it more bar like. Used only 3 eggs, halved the baking powder and baking soda. Added 1 tsp pumpkin pie spice and 1/2 tsp nutmeg to flour mixture. Done in 23 minutes.

The only thing I changed in this was using applesauce instead of the oil. I would call it more of a cake than a bar, but this is by far the softest moistest cake I have ever had. My family ate it up in 2 days.

I followed the recipe exactly. The only thing I done different was I lined my pan with non-stick foil and then poured the batter in and baked. Once done and cool to the touch, I took a sharp knife and sliced down the edges to loosen from the pan. Then my husband and I each grabbed one end of the foil gently lifting up and out of the pan. With the them now laying on the counter and still on the foil, I iced and used a pizza cuter (the wheel kind) and sliced right through with ease. Making great sized bars. I then let the icing set a bit and used a small brownie spatula to lift them up off the non-stick foil with ease and placed in a sealed container. It worked with ease! oh yeah, for such a simple recipe, these are always a hit with family and friends.

I have made this recipe several times and always love them. My family gobbles them right down, anytime of year. I do double the frosting recipe as I like lots of cream cheese frosting. The rest of the recipe I follow to a tee!

I have been making these since they first appeared in Better Homes & Gardens magazine 25 or 30 years ago. I like the fact that they are easy to make, and everyone likes them. However, some people go absolutely crazy over them!!

Not really a bar more of a cake but DELICIOUS anyway. I did modify as per suggested with 3 eggs instead of 4 and 30 ounces of Libby's pumbkin pie filling instead of the puree and I also used pumpkin pie spice. Wow these were good. Glad we had to take them to a potluck or we would have eating the whole pan.

Good. Wanting more a bar rather than a cake, I took the advice of other reviewers and omitted one egg and halved the baking powder and baking soda. I also added 1/2 tsp. of cloves and 1/2 tsp. of nutmeg. The end result was good but not what I would consider a "bar." Fiance said this reminded him of an unrolled pumpkin roll, and I agree.

I'm giving this 5 stars because everyone who tried them loved them. I took them to a holiday party, and everyone raved about them! However, I had one right after I made them, and then another during the party, and each time I felt like I just dropped a lead brick in my stomach. Not sure why, and I probably won't make them again, but, like I said, everyone else loved them. They are very easy to make, so I would suggest trying them out for yourself.

If you're looking to make actual "bars" don't use this recipe. If you want to make an incredibly delicious pumpkin cake, you'd be crazy not to try it - it's sooooo good! The second time around I halved the recipe, then added some nutmeg and ginger. I also didn't make as much icing as it called for bc I thought it was a tad too sweet with the original amount.
