Original Recipe Yield 4 servings

Ingredients

  • 5 slices bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can stewed tomatoes
  • 8 ounces spaghetti
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 1/2 teaspoons dried parsley
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Directions

  1. In a large skillet over medium heat, cook bacon until crisp. Remove from pan, break into 1/2 inch pieces, and set aside. Drain bacon grease, and return pan to heat. Saute onions over medium heat until tender. Stir in garlic and cook 1 minute more. Stir in bacon and tomatoes. Cover, reduce heat and simmer 15 to 20 minutes.
  2. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Stir basil, oregano and parsley into tomato sauce. Add salt and pepper to taste. Cook 5 minutes more. Toss with hot pasta. Top with grated Parmesan cheese when serving.
