Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

Zucchini and yellow bell peppers are grilled ahead of time and combined with shrimp, cherry tomatoes, and feta cheese. I leave the Dijon dressing on the side and toss it at the picnic, just before serving.

A fragrant saute of onions, garlic, bell pepper and mushrooms is simmered with white wine and lemon juice, with fresh scallops tossed in to soak up the flavors. Serve with fettucini bathed in pesto, and sprinkle with Parmesan cheese.

A daring dash of red pepper flakes gives off a spicy heat in this marvelous sauce of sauteed garlic and tomatoes. Add quickly sauteed shrimp and scallops, stir in a bit of parsley and serve over hot linguine.

Taste a late summer harvest in a colorful pasta sauce that needs no cooking. Simply stir cooked corn, chopped tomatoes and sliced green onions into a dressing of olive oil, red wine vinegar and basil. Toss with hot pasta and sprinkle with Parmesan.

Use cream sherry to enrich a tasty mix of tomatoes, garlic, basil, mint, olive oil and hot pepper flakes. After steeping for two hours, use some of the liquid to flavor hot pasta. Add Asiago and fontina cheese, then toss everything together.

Italian-style tomatoes go for a brief simmer with tender white cannellini beans and garden-fresh spinach. Serve over hot penne and spoon crumbled bits of feta cheese over the top for a creamy sharp bite with every mouthful.

Mushrooms, zucchini and onion are finely chopped then stewed with butter and garlic until tender. Cream is added at the last minute for a rich vegetarian sauce.
