INGREDIENTS
8 ounces uncooked spiral pasta
1/2 pound bulk Italian sausage
1 small onion, chopped
2 garlic cloves, minced
1 bunch escarole or spinach, trimmed and coarsely chopped
1 (15 ounce) can white kidney or cannelini beans, rinsed and drained
1 cup chicken broth
1/3 cup grated Parmesan or Romano cheese

DIRECTIONS
Cook pasta according to package directions.
Meanwhile, in a large skillet, cook sausage, onion and garlic until sausage is no longer pink and onion is tender; drain. Stir in escarole, beans and broth. Cover and simmer for 6-8 minutes or until escarole is wilted and tender. Drain pasta; add to vegetable mixture. Sprinkle with cheese.

This was so easy, and the results were fantastic! I did add 1 can of drained diced Italian tomatoes for color, and used some chicken sausage I had on hand. My husband and I really enjoyed it, and it was so quick & healthy--thanks!

This was ok for a weeknight meal. I thought it was a little bland though. I used veggie sausage, so maybe that's why.

Perfect. Love it. Fast, simple and delicious. I used a chicken pesto sausage and added just a bit of extra broth after it was all done cooking. Thanks so much, I really enjoyed this dish.

This was great! I used vegetable broth instead of chicken broth, and no sausage because I'm vegetarian. The only thing was I thought it needed a bit more garlic and perhaps some crushed red pepper. Other than that, it was yum! My mom requested I make it again for her. Thanks!

I used chicken sausage and canned escarole in chicken broth. My husband loved it and even my 4 year old said it was excellent. Thank you - Will definitely make again!!

Excellent dish. I used 1 hot and 1 sweet italian sausage - nice kick, but not overly spicy. Didn't have to add or change a thing. I wish I'd served this with bread or garlic toast because we wanted to clean our plates!
