My husband and I truly enjoyed this recipe and I'm not even a cornbread person so this was an experiment for me. It was pretty easy to make too and sooooo good as left overs the next day, tasted even better! The only changes I made to it because I'm not a person who likes too much spice and was a little nervous about the Chili Powder was instead of the 1 1/2 tablespoons of Chili Powder I only did 1 tablespoon which was perfect, just the right amount of bite to it. Were also cheese lovers as well so we added more cheese. Instead of 1 cup we did 1 1/2 cups of cheese. Overall we would definitely make this recipe again. May even add different things to it next time too like onions, etc. Our only complaint my husband and I had was the cornbread on top was very thick so the bad thing was you most of the time you tasted the cornbread. I would of liked a thinner layer of it on top, but it had a really crunchy taste to it which we liked. It could of been the brand of cornbread mix we used as well though.
