Very good pancakes. Next time I will reduce the sugar to 1/4 cup and add some cinnamon and nutmeg. My husband had these with maple syrup, while I served mine with clotted cream and cherry jam or just plain! A great way to start the day.

i was skeptical but, these are yummy. i added choc. chips. all my kids loved them and they are filling. it's runny batter but it turns out great.

I got 8 thick (1/3 cup) pancakes out of this recipe. They were sweet enough to eat without syrup but since I still called them pancakes, my kids weren't too happy about it. I'll have to come up with something else to call them next time! I used old fashioned oats and I subbed extra light olive oil for the veg oil, but I think they would be even better with coconut oil. I found that they burned more easily than other pancake recipes, perhaps because of the added sugar? I experimented by adding chocolate chips to two of them and cinnamon to one. The cinnamon batter was good, but the actual pancakes didn't taste as good as the cinnamon-free pancakes. The chocolate chip ones were good, but not necessary, since they taste good without the chocolate as well.

I think I'll have to play with this one a little bit, but it's a good start. The pancakes didn't really rise and the texture was a little too moist for me. I think a little more soda or even some baking powder might help these out. I added 1 t cinnamon as a couple of reviewers suggested and it was a good flavor in these. I also only used half the brown sugar, and still enjoyed them with just berries, no butter or syrup. I had one with peanut butter and it was really good too. I may try making them with butter instead of oil next time. But I'll definitely make them again!

I added 1/4 c. of flaxseed meal and used Splenda instead of brown sugar and it turned out wonderful! This is definitely a keeper!

I loved that these pancakes are easy to whip up and healthy too! I used old fashioned oats and they worked fine. Deliciously hardy, a bit thin but yummy with dried cranberries and chocolate chips.
